Cranberry Cornbread
Ingredients
1/2 cup butter, softened
1 cup sugar
2 large eggs
1 1/2 cups all-purpose flour
1 1/2 cup cornmeal
2 teaspoons baking powder
1 1/2 cups buttermilk
1 cup dried cranberries
Directions
- In a bowl, mix butter, sugar and eggs with hand mixer
- Add flour, baking powder and cornmeal and mix
- Fold in cranberries
- Pour mixture into buttered baking pan
- Bake in oven at 375-degrees for 40-45 mins
