The Jungle Bird is one of my favorite cocktails because I love how the tropical flavors worth with the bitter undertones of the Campari. While the original recipe calls for dark rum, I decided to switch it up and use bourbon instead. Let me tell you, this swap did not disappoint.

The bourbon added vanilla, caramel and spicy notes which worked so well with the acidity of lime juice, bitterness of the Campari and sweetness of the pineapple juice. This is a great cocktail to make when you’re trying to envision yourself in a tropical paradise, even if it’s a gloomy day.
