Move over, cloud bread. The fluffy phenomenon that dominated TikTok in 2020 has been replaced by another type of bread that is fun, delicious, and super simple to make. So simple that it only requires two ingredients. Readers, meet ice cream bread.
Ice cream bread is exactly what it sounds like. It’s a loaf of bread that’s made from ice cream. But wait, it gets better. You can make this bread using any flavor of ice cream. You can also mix your favorite toppings into the batter or just throw them right on top. In short, you can have the ultimate ice cream sundae in a loaf of bread.
We followed this simple recipe and made a basic vanilla ice cream cake topped with rainbow sprinkles. We also got creative and made a maple walnut version which we topped with some crunchy maple sprinkles that will be our new go-to fall dessert.
We found the bread to be a bit dry on its own, but remedied that by serving it with a scoop of ice cream on the side. And there’s no way we’re going to complain about an excuse to have an extra scoop of our favorite ice cream.
Ice Cream Bread
- 2 cups of melted ice cream
- 1 1/2 cups self rising flour
Directions: Let your ice cream sit out for a couple of hours until it’s really soft and a little soupy. Preheat your oven to 350 degrees, and grease your loaf pan with a bit of cooking spray. Pour your melted ice cream into a bowl along with any add-ins you may want. Next, add self rising flour, and stir until combined. Pour the batter into your loaf pan and add any toppings. Then bake for 35-40 minutes. Let the bread cool on a rack before slicing. Garnish with a scoop of your favorite ice cream and enjoy!
