Delicata Squash Stuffing


  • 1 whole delicata squash, sliced

  • 2-3 standard Italian sweet sausages

  • 1 1/2 cup walnuts

  • olive oil of your choice for drizzle


  • Slice a delicata squash in half and scoop out the seeds
  • Cut the squash into approximately .5” slices
  • Place slices on a foil-lined baking tray
  • Slide sausages and distribute across baking tray
  • Sprinkle a slight amount of black pepper and salt to taste
  • Sprinkle walnuts onto tray
  • Drizzle olive oil and bake for 20 minutes at 350-degrees
